4 boneless, skinless chicken breasts

2 large onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 cup sour cream

1 cup shredded Gruyère cheese

1 cup shredded Swiss cheese

2 tablespoons olive oil

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon balsamic vinegar

Fresh parsley, chopped for garnish

1 loaf of French baguette, sliced (optional, for serving)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the onions: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are caramelized and golden brown. Add garlic and cook for an additional 2 minutes until fragrant.

      Chicken preparation: Season the chicken breasts with salt, black pepper, and thyme. In a greased baking dish, place the chicken breasts and pour the beef broth and balsamic vinegar over them.

        Combine mixtures: Spread the caramelized onions and garlic evenly over the chicken. In a bowl, mix together the sour cream and half of the Gruyère and Swiss cheese. Spread this mixture over the onions, ensuring all chicken is coated.

          Cheese topping: Sprinkle the remaining Gruyère and Swiss cheese on top of the sour cream layer.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

              Garnish and serve: Once done, let it rest for a few minutes before garnishing with chopped parsley. Serve warm with sliced baguette if desired, perfect for dipping in the rich sauce.
