  • 2 cups long-grain white rice uncooked
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups French onion soup canned or homemade
  • 1 cup shredded Gruyère cheese for topping
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh thyme chopped
  • 2 tablespoons olive oil for sautéing
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until softened and caramelized, about 10-12 minutes, stirring occasionally.
  • Once the onions are caramelized, add the minced garlic and fresh thyme to the skillet, cooking for an additional 1-2 minutes until fragrant. Remove from heat and set aside.
  • In a large mixing bowl, combine the uncooked rice, chicken pieces, French onion soup, salt, and black pepper. Mix until everything is well combined.
  • Transfer the rice and chicken mixture into a greased 9x13 inch baking dish. Spread the caramelized onion mixture evenly over the top.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and sprinkle the shredded Gruyère cheese on top.
  • Return the dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
