French Onion Soup

This french onion soup is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 bay leaf

8 cups beef stock (or vegetable stock for vegetarian)

1 cup dry white wine (such as Sauvignon Blanc)

Salt and freshly cracked black pepper, to taste

1 French baguette, sliced into 1-inch rounds

2 cups grated Gruyère cheese (or a mix of Gruyère and mozzarella)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions and sugar. Cook, stirring frequently, until the onions are caramelized and deep golden brown, about 30-40 minutes. Reduce heat if they start to burn.

    Stir in the minced garlic, thyme, and bay leaf, cooking for an additional 2-3 minutes until fragrant.

      Pour in the wine, scraping the bottom of the pot to deglaze. Allow the wine to simmer and reduce by half, about 5-7 minutes.

        Add the beef or vegetable stock to the pot. Season with salt and pepper to taste. Bring to a simmer and let it cook for about 20-30 minutes, allowing the flavors to meld. Remove the bay leaf before serving.

          Preheat your oven broiler. Meanwhile, place the sliced baguette on a baking sheet. Toast under the broiler until golden brown on both sides, about 2-3 minutes per side.

            To serve, ladle the hot soup into oven-safe bowls. Top each bowl generously with a couple of toasted baguette slices, followed by a heap of grated Gruyère cheese.

              Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown.

                Carefully remove from the oven, garnish with chopped parsley, and serve immediately.
