Ingredients

1 pound fresh strawberries, hulled and sliced

1 pound fresh blueberries

1 pound fresh raspberries

1 pound cake (store-bought or homemade), cut into cubes

2 cups heavy whipping cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

Fresh mint leaves for garnish

Instructions

Prepare the Berries: In a large bowl, combine the sliced strawberries, blueberries, and raspberries. Drizzle with lemon juice and gently toss to coat the berries evenly. Set aside.

Make the Cream Mixture: In a separate bowl, combine the heavy whipping cream, mascarpone cheese, powdered sugar, and vanilla extract. Use a hand mixer to whip the mixture until soft peaks form, being careful not to overwhip.

Assemble the Trifle: In a large trifle dish or individual cups, start by layering half of the cubed pound cake at the bottom. Spoon half of the whipped cream mixture over the cake, followed by half of the mixed berries.

Repeat Layers: Repeat the layers with the remaining pound cake, cream, and berries. Finish with a dollop of remaining whipped cream on top.

Chill and Serve: Refrigerate the trifle for at least 2 hours to allow the flavors to meld. Before serving, garnish with fresh mint leaves for a pop of color.
