4 ears of fresh corn, kernels removed

1 medium cucumber, peeled and diced

1 large ripe tomato, chopped

1 red bell pepper, diced

1 small red onion, chopped

2 cloves garlic, minced

3 cups vegetable broth (chilled)

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon fresh lime juice

Salt and pepper to taste

Fresh basil or cilantro for garnish

Optional: diced avocado and croutons for topping

Prep the Vegetables: In a large bowl, combine the corn kernels, diced cucumber, chopped tomato, diced red bell pepper, and red onion. Set aside a few tablespoons of the corn and a bit of the diced cucumber for garnishing later.

    Blend the Base: Transfer the rest of the vegetable mixture to a blender. Add in the minced garlic, vegetable broth, olive oil, apple cider vinegar, lime juice, salt, and pepper. Blend until smooth, but still slightly chunky for texture.
