2 cups fresh cranberries, washed and picked

1 cup granulated sugar

1 cup chopped celery

1 cup crushed pineapple, drained

1 cup mini marshmallows

1 cup chopped pecans or walnuts

1 cup Greek yogurt (plain)

1 teaspoon vanilla extract

Fresh mint leaves for garnish

Instructions
 

In a medium-sized bowl, combine the fresh cranberries and granulated sugar. Stir well to coat the cranberries. Let this mixture sit for at least 1 hour to allow the cranberries to release their juices and soften slightly.

    After the cranberries have soaked, add the chopped celery, crushed pineapple, mini marshmallows, and chopped nuts to the bowl. Stir until all the ingredients are well combined.

      In a separate bowl, whisk together the Greek yogurt and vanilla extract until smooth.

        Gently fold the yogurt mixture into the cranberry mixture, ensuring everything is evenly coated.

          Transfer the salad to a serving bowl and garnish with fresh mint leaves. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
