2 large cucumbers, preferably English or Persian

1 can (15 oz) chickpeas, drained and rinsed

1 small red onion, finely diced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1/2 cup fresh parsley, chopped

1/4 cup fresh mint, chopped (optional)

Juice of 2 lemons

3 tablespoons extra-virgin olive oil

1 teaspoon red wine vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Feta cheese crumbles (optional, for topping)

Instructions
 

Start by washing the cucumbers thoroughly. Cut off both ends and slice each cucumber in half lengthwise. Place each cucumber half cut-side down on a cutting board.

    Using a rolling pin or the flat side of a meat mallet, gently smash each cucumber half until they crack slightly but remain intact. This will help release juices and enhance flavor absorption.

      Chop the smashed cucumbers into bite-sized pieces and place them in a large mixing bowl.

        Add the drained chickpeas, diced red onion, cherry tomatoes, and bell pepper to the bowl with the cucumbers.

          In a small bowl, whisk together lemon juice, olive oil, red wine vinegar, garlic powder, salt, and pepper. Adjust seasoning if desired.

            Pour the dressing over the salad ingredients and gently toss to combine, ensuring all components are well coated.

              Fold in the chopped parsley and mint (if using) for a fresh herbal note.
