Ingredients
  

2 cups fresh snap peas, trimmed and halved

1 cup cherry tomatoes, halved

1 cup radishes, thinly sliced

½ cup red onion, thinly sliced

1 avocado, diced

¼ cup feta cheese, crumbled

¼ cup toasted almonds, roughly chopped

¼ cup fresh mint leaves, chopped

¼ cup olive oil

2 tbsp apple cider vinegar

1 tsp honey

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the snap peas, cherry tomatoes, radishes, and red onion. Toss gently to mix the vegetables evenly.

    In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well-emulsified.

      Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients.

        Add the diced avocado, feta cheese, toasted almonds, and chopped mint. Carefully mix until everything is well combined, being cautious not to mash the avocado.

          Taste and adjust the seasoning if needed. Allow the salad to sit for about 10 minutes to let the flavors meld together before serving.
