4 cups fresh peaches, sliced (about 6-8 medium peaches)

1 cup granulated sugar (divided)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1 tablespoon cornstarch (optional, for thicker filling)

Whipped cream or vanilla ice cream (for serving)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large mixing bowl, combine the sliced peaches, 1/2 cup of sugar, vanilla extract, lemon juice, and ground cinnamon. Let it sit for about 15 minutes, allowing the peaches to release their juices. If you prefer a thicker filling, stir in the cornstarch now.

      In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.

        Gradually add the milk to the dry ingredients, stirring until just combined. Then pour in the melted butter and mix until fully incorporated. The batter will be slightly lumpy.

          Pour the batter into a greased 9x13-inch baking dish, spreading it evenly across the bottom.

            Carefully spoon the peach mixture over the batter, ensuring an even distribution of peaches on top. Do not stir; the batter will rise around the peaches as it bakes.

              Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

                Allow the cobbler to cool slightly before serving. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream on top.
