1 large egg

Prepare the Pineapple:

    - After cutting the pineapple into rings, pat them dry with paper towels to remove excess moisture. This will help the batter stick better.

      Make the Batter:

        - In a mixing bowl, combine the flour, baking powder, ground cinnamon, and salt.

          - In a separate bowl, whisk together the egg and coconut milk.

            - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be smooth and thick enough to coat the pineapple rings.

              Coat the Pineapple:
