Ingredients
  

1 fresh pineapple, peeled, cored, and cut into rings

1/2 cup all-purpose flour

1/2 cup shredded coconut (unsweetened)

1/2 cup panko breadcrumbs

1/4 cup sugar (optional, for sweetness)

2 large eggs, beaten

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Vegetable oil, for frying

Fresh mint leaves and lime wedges, for garnish

Instructions
 

Prepare the Breading Station: In one bowl, combine flour and a pinch of salt. In a second bowl, whisk together the eggs, vanilla extract, and cinnamon. In a third bowl, combine shredded coconut and panko breadcrumbs, mixing well.

    Coat the Pineapple: Dip each pineapple ring first into the flour, shaking off the excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat the ring with the coconut-panko mixture, pressing gently to ensure it sticks well. Repeat for all pineapple rings.

      Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan to about 1/4 inch deep. Heat over medium heat until shimmering (about 350°F or 175°C).

        Fry the Pineapple: Carefully add the coated pineapple rings to the hot oil, being sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

          Drain Excess Oil: Once fried, transfer the pineapple rings to a plate lined with paper towels to absorb any excess oil. If desired, sprinkle a little sugar on top while still warm for added sweetness.

            Serve: Arrange the fried pineapple on a serving platter. Garnish with fresh mint leaves and serve with lime wedges on the side for a zesty touch. Enjoy immediately!
