8 slices of thick bread (like brioche or challah)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, diced

1/2 teaspoon cinnamon

1/2 cup flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

Oil for frying

Whipped cream and extra strawberries for garnish (optional)

Prepare the Cheesecake Filling: In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the diced strawberries until evenly distributed. Set aside.
