Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 tablespoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup graham cracker crumbs

1 cup milk chocolate chips

1 cup mini marshmallows

1 cup powdered sugar (for frosting)

2 tablespoons milk (for frosting)

1/2 teaspoon vanilla extract (for frosting)

Additional mini marshmallows (for topping)

Chocolate drizzle (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.

Add Egg and Vanilla: Beat in the egg and the 1 tablespoon of vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs.

Mix Dry with Wet Ingredients: Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined. Avoid over-mixing.

Add Chocolate Chips and Marshmallows: Fold in the milk chocolate chips and mini marshmallows with a spatula, ensuring they are evenly dispersed throughout the dough.

Scoop the Cookies: Using a cookie scoop or a tablespoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Prepare the Frosting: In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth and creamy.

Frost the Cookies: Once the cookies are completely cool, drizzle the frosting over the tops of each cookie.

Add Toppings: While the frosting is still wet, sprinkle additional mini marshmallows on top. For an extra treat, drizzle with melted chocolate if desired.

Let Set: Allow the frosting to set for about 15-20 minutes before serving.

Prep Time: 20 minutes | Total Time: 50 minutes | Servings: About 24 cookies
