Ingredients

1 cup coconut water

1/2 cup fresh pomegranate juice

1/2 cup sparkling water

1 tablespoon fresh lime juice

1 tablespoon honey or agave syrup (optional for sweetness)

1/2 cup ice cubes

Pomegranate seeds for garnish

Coconut flakes for rim (toasted for extra flavor)

Fresh mint leaves for garnish

Instructions

Prepare the Glassware: Start by toasting the coconut flakes in a small skillet over medium heat until they are golden brown. Allow them to cool slightly, then rim your serving glasses with lime juice and dip them into the toasted coconut flakes to create a frosty appearance.

Mix the Base: In a shaker or a large mixing glass, combine coconut water, fresh pomegranate juice, fresh lime juice, and honey or agave syrup (if using). Stir well until all ingredients are combined.

Chill It: Add ice cubes to the mixture and stir gently to cool it down. Alternatively, you can place the mixture in the refrigerator for about 10-15 minutes to chill.

Assemble the Mocktail: Fill your prepared glasses with ice cubes. Pour the chilled mocktail mixture over the ice, filling each glass about 3/4 full.

Add Sparkle: Top each glass with sparkling water, giving it a gentle stir to mix without losing the fizz.

Garnish and Serve: Sprinkle pomegranate seeds on top and add a few fresh mint leaves for a pop of color. Serve immediately with a festive straw or cocktail stirrer.

Prep Time: 10 minutes | Total Time: 15 minutes | Servings: 2-3 glasses
