1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup crushed peppermint candies (plus extra for topping)

1/4 teaspoon peppermint extract

1/2 cup white chocolate chips (optional for drizzling)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Melt Chocolate and Butter: In a medium saucepan over low heat, melt the semi-sweet chocolate chips and butter together, stirring until smooth. Remove from heat and let cool slightly.

      Mix Wet Ingredients: In a large mixing bowl, combine the melted chocolate mixture, granulated sugar, eggs, and vanilla extract. Whisk until well combined and smooth.

        Combine Dry Ingredients: In another bowl, sift together the flour, cocoa powder, salt, and baking powder.

          Fold Ingredients: Gradually add the dry ingredients into the wet ingredients, mixing just until combined. Be careful not to overmix.

            Add Peppermint: Fold in the crushed peppermint candies and peppermint extract, ensuring they are evenly distributed throughout the cookie dough.

              Scoop Dough: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Bake Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft. They will continue to firm up as they cool.

                  Cool Down: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

                    Optional Drizzle: If using, melt white chocolate chips in a microwave-safe bowl in 30-second increments until smooth. Drizzle over the cooled cookies and sprinkle with additional crushed peppermint for garnish.
