4 boneless, skinless chicken thighs

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 lemon (zested and juiced)

1 cup chicken broth

2 cups baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper.

    Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs and sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

        Add Herbs & Lemon: Stir in the dried thyme, rosemary, lemon zest, and lemon juice. Cook for another minute to let the flavors meld together.

          Make the Sauce: Pour in the chicken broth and bring the mixture to a simmer. Scrape any browned bits from the bottom of the pan for added flavor. Allow the sauce to reduce slightly for about 2-3 minutes.

            Add Spinach: Add the baby spinach to the skillet and stir until it wilts. Return the cooked chicken thighs to the skillet, spooning the garlic butter sauce over them.

              Serve: Cook for an additional minute to ensure the chicken is heated through. Garnish with chopped fresh parsley before serving.
