Ingredients
  

8 oz fettuccine or spaghetti

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1/2 tsp red pepper flakes (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Prepare the Chicken: Season the chicken pieces with salt and pepper. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining butter and the minced garlic. Sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Add Liquids: Pour in the chicken broth and bring to a simmer. Cook for 2-3 minutes until slightly reduced. Stir in the heavy cream and bring it back to a gentle simmer.

          Combine: Add the Parmesan cheese, stirring constantly until melted and the sauce is creamy. Season with salt, pepper, and red pepper flakes, if desired.

            Join Forces: Add the cherry tomatoes and cooked chicken back into the skillet. Stir to combine, then add the cooked pasta. Toss everything together, adding a little reserved pasta water if necessary to loosen the sauce.

              Serve: Garnish with chopped parsley before serving.
