1 lb (450g) Italian sausage (mild or spicy, based on preference)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

For the Creamy Parmesan Pasta:

8 oz (225g) pasta of your choice (fettuccine or penne work well)

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon butter

1 clove garlic, minced

Salt and freshly ground black pepper to taste

Fresh basil or parsley for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sausage Bites: While the pasta is cooking, heat a large skillet over medium heat. Remove the sausage from its casing and crumble it into the skillet. Cook until browned and fully cooked, about 5-7 minutes. Use a slotted spoon to transfer the cooked sausage to a plate, leaving the fat in the skillet.

      Make the Garlic Butter: In the same skillet, add the butter. Once melted, add the minced garlic, thyme, and oregano. Sauté for 1-2 minutes until fragrant. Return the sausage bites to the skillet and toss to coat them in the garlic butter mixture. Season with salt and pepper, then remove from heat.

        Prepare the Creamy Parmesan Sauce: In another skillet, heat olive oil and butter over medium heat. Add the minced garlic and sauté for about 30 seconds. Pour in the heavy cream, and bring to a gentle simmer. Gradually stir in the Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency. Season with salt and pepper.

          Combine Pasta and Sauce: Add the cooked pasta to the creamy sauce, tossing gently to coat. If needed, add a bit more pasta water for a creamier texture.
