Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Steak: Season the steak bites generously with salt and pepper on all sides.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak Bites: Add the steak cubes to the hot skillet in a single layer, making sure not to overcrowd the pan. Sear for about 3-4 minutes on each side (or until they reach your desired doneness). For medium-rare, aim for an internal temperature of 135°F (57°C).

Add Garlic and Herbs: Once the steak is cooked, reduce the heat to low. Push the steak bites to one side of the pan. In the cleared area, add the butter, minced garlic, thyme, and rosemary. Let the butter melt and the garlic sauté for about 1-2 minutes, stirring frequently to prevent burning.

Combine Steak and Garlic Butter: Once the garlic is fragrant, stir the steak bites into the garlic butter to coat them thoroughly.

Serve: Remove from heat and transfer steak bites to a serving plate. Drizzle the remaining garlic butter from the pan over the steak bites and garnish with fresh parsley.
