Ingredients
  

4 boneless, skinless chicken breasts

4 cloves garlic, minced

1 medium onion, sliced

1 bell pepper (any color), sliced

2 medium zucchinis, sliced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon red pepper flakes (optional)

¼ cup olive oil

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine the olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Add the chicken breasts and ensure they're well coated. Let them marinate for at least 30 minutes (or overnight for more flavor).

    Prepare the Veggies: While the chicken is marinating, slice the onion, bell pepper, and zucchinis. Halve the cherry tomatoes and set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes on one side without moving it, until golden brown. Flip and cook for another 6-7 minutes or until the chicken is cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a splash of olive oil if needed. Add the sliced onion and bell pepper, and sauté for 2-3 minutes until slightly softened. Then add the zucchinis and cherry tomatoes, and cook for an additional 4-5 minutes until the veggies are tender.

          Combine and Serve: Slice the cooked chicken and add it back into the skillet with the veggies. Toss everything together to combine and heat through for about 2 minutes. Adjust seasoning with salt, pepper, and red pepper flakes if desired.

            Garnish and Enjoy: Transfer the garlic chicken and veggies to a serving platter. Sprinkle fresh parsley over the top and serve warm.
