2 boneless, skinless chicken thighs

4 cups chicken broth

2 servings of fresh ramen noodles

4 cloves garlic, minced

1 red chili pepper, sliced (adjust for spiciness)

1 tablespoon soy sauce

1 tablespoon miso paste

1 teaspoon sesame oil

2 green onions, chopped

2 boiled eggs, halved (optional)

1 cup baby spinach or bok choy

Crushed red pepper flakes (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a medium bowl, mix the minced garlic, sliced chili pepper, soy sauce, miso paste, and sesame oil. Add the chicken thighs and marinate for at least 30 minutes.

    Cook the Chicken: In a skillet over medium heat, add a little oil. Once hot, add the marinated chicken thighs and cook for about 6-7 minutes per side until the chicken is golden and cooked through. Remove from heat and slice them thinly.

      Make the Broth: In a large pot, bring the chicken broth to a simmer. Add in any remaining marinade from the chicken for added flavor. Stir in the remaining minced garlic and let it cook for about 5 minutes.

        Cook the Noodles: While the broth simmers, in a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

          Add Greens: Stir in the baby spinach or bok choy into the simmering broth and let it wilt for 2-3 minutes.

            Assemble the Ramen: Divide the cooked ramen noodles into bowls. Pour the hot broth and greens over the noodles. Top with sliced chicken, halved boiled eggs (if using), and garnish with chopped green onions, crushed red pepper flakes, and sesame seeds.
