8 oz cream cheese, softened

4 oz goat cheese, softened

1/4 cup shredded sharp cheddar cheese

2 cloves garlic, minced

1 tbsp fresh chives, chopped

1 tbsp fresh parsley, chopped

1 tsp fresh thyme leaves

1/2 tsp salt

1/4 tsp black pepper

1 cup pecans, finely chopped

1 tbsp olive oil (optional, for drizzling)

Instructions
 

In a mixing bowl, combine the softened cream cheese, goat cheese, and sharp cheddar cheese. Use a hand mixer or fork to blend until smooth and creamy.

    Add the minced garlic, chopped chives, parsley, thyme, salt, and pepper to the cheese mixture. Stir until all ingredients are well combined.

      Use your hands to shape the mixture into a log or cylinder. You can also form it into a round ball if preferred. Wrap the log in plastic wrap and refrigerate for at least 2 hours or until firm.

        Once the cheese log is firm, spread the finely chopped pecans onto a plate. Unwrap the cheese log and roll it in the chopped pecans, pressing gently to adhere the nuts to the cheese.
