2 pounds Yukon Gold potatoes, peeled and cubed

4 cloves garlic, peeled

½ cup unsalted butter (1 stick), cubed

½ cup whole milk (or heavy cream for extra richness)

Salt to taste

Freshly ground black pepper to taste

2 tablespoons freshly chopped chives (optional, for garnish)

A sprinkle of smoked paprika (optional, for added flavor)

Boil the Potatoes and Garlic: In a large pot, add the cubed potatoes and garlic cloves. Cover with water and add a pinch of salt. Bring to a boil over high heat, then reduce to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain: Carefully drain the potatoes and garlic in a colander. Allow them to sit for a minute to steam off excess moisture.

      Mash: Return the drained potatoes and garlic to the pot over low heat. Use a potato masher or a ricer to mash until smooth. If you want a creamier texture, ricing is the way to go.

        Add Butter and Milk: While still on low heat, add the cubed butter and pour in the milk. Stir well until the butter is melted and the mixture is creamy. Adjust the milk quantity depending on your preferred consistency.

          Season: Season generously with salt and freshly ground black pepper. Taste and adjust seasonings as necessary.
