1.5 pounds mini potatoes (any color)

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried rosemary

½ teaspoon red pepper flakes (optional)

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the mini potatoes thoroughly and cut them in half or quarters if they're larger, ensuring they are all roughly the same size for even cooking.

      In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, dried rosemary, red pepper flakes (if using), salt, and black pepper. Mix well to create a marinade.

        Add the halved mini potatoes to the bowl and toss until they are evenly coated with the garlic herb mixture.

          Spread the potatoes onto a baking sheet lined with parchment paper, making sure they are in a single layer for even roasting.

            Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender, flipping once halfway through for even crispiness.

              Once the potatoes are done, remove them from the oven and sprinkle the grated Parmesan cheese over the top while they are still hot.

                Toss the potatoes gently to distribute the cheese evenly. Return to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly crispy.

                  Remove from the oven again, garnish with fresh chopped parsley, and serve hot.
