Ginger Molasses Cookie Sandwiches

1 ½ cups all-purpose flour

1 tsp baking soda

1 tsp ground ginger

1 tsp ground cinnamon

½ tsp ground cloves

½ tsp salt

¾ cup unsalted butter, softened

1 cup packed brown sugar

¼ cup unsulfured molasses

1 large egg

1 tsp vanilla extract

1 cup powdered sugar (for filling)

2-3 tbsp cream cheese, softened (for filling)

1 tsp vanilla extract (for filling)

Optional: extra sugar for rolling cookies

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt until well combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and brown sugar until light and fluffy, about 3-4 minutes.

        Add Molasses and Egg: Beat in the molasses, egg, and vanilla extract until well combined.

          Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

            Shape the Cookies: If desired, sprinkle some extra sugar on a plate. Using a tablespoon or cookie scoop, shape the dough into balls and roll them in the sugar. Place them on the prepared baking sheets, about 2 inches apart.

              Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked. They will appear soft but will firm up as they cool.

                Cool the Cookies: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare the Filling: In a small bowl, combine powdered sugar, cream cheese, and vanilla extract. Mix until smooth and creamy. Adjust the consistency with a little milk if too thick.
