1 ½ cups all-purpose flour

1 teaspoon ginger powder

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon baking soda

⅓ teaspoon salt

½ cup unsalted butter, softened

⅓ cup brown sugar, packed

⅓ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup cream cheese, softened

1 cup powdered sugar

2 teaspoons milk (adjust for consistency)

1 teaspoon lemon juice

Green and red sprinkles for decoration (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt until well combined. Set aside.

      Cream the Butter and Sugars: In a large bowl, use a hand mixer or stand mixer to beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).

        Add Egg and Vanilla: Beat in the egg and vanilla extract until combined.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not over-mix.

            Make Cheesecake Filling: In a separate bowl, combine the cream cheese, powdered sugar, milk, and lemon juice. Mix until smooth and creamy.

              Scoop the Dough: Using a cookie scoop, drop tablespoon-sized balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

                Add Cheesecake Filling: Use your thumb or the back of a small spoon to make an indent in the center of each cookie. Fill the indent with a small amount of the cheesecake filling (about ½ teaspoon per cookie).

                  Bake: Bake in preheated oven for 10-12 minutes, or until the edges are set and start to turn golden brown. The centers may look a little soft—this is okay!

                    Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                      Decorate: Once cooled, you can sprinkle with green and red sprinkles for a festive touch.
