Ingredients

4 slices of rustic bread (like sourdough or whole grain)

4 oz goat cheese, softened

2 oz sharp white cheddar cheese, grated

2 oz mozzarella cheese, grated

2 tablespoons honey

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Optional: 1 cup fresh arugula for garnish

Instructions

Prepare the Cheese Mixture: In a bowl, combine the softened goat cheese, grated white cheddar, grated mozzarella, honey, and thyme. Mix until well blended. Season with salt and pepper to taste.

Assemble the Sandwiches: Spread a generous amount of the cheese mixture onto two slices of bread. Top each with the remaining slices to form two sandwiches.

Butter the Bread: Spread the softened butter on the outer sides of each sandwich to ensure they grill perfectly golden.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet. Cook for about 3-4 minutes on one side until golden brown. Press down gently with a spatula to ensure even grilling.

Flip and Finish Cooking: Carefully flip the sandwiches using a spatula, and grill the other side for an additional 3-4 minutes until it is golden and the cheese is melted.

Serve: Remove the sandwiches from the skillet and let them cool for a minute. If desired, top with fresh arugula before slicing in half. Serve with a drizzle of extra honey for a sweet contrast.
