Golden Cheesy Mashed Potato Bites

3 cups mashed potatoes (preferably leftover and well-chilled)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 green onions, finely chopped

1 tablespoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour (plus extra for dusting)

2 large eggs, beaten

1 1/2 cups breadcrumbs (Panko for extra crunch)

Oil for frying

Instructions
 

In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, cream cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.

    Form the mixture into small balls or patties, about the size of a golf ball. If the mixture is a bit sticky, lightly dust your hands with flour to make rolling easier.

      Once all the bites are formed, set up a breading station: place the flour in one bowl, the beaten eggs in a second bowl, and the breadcrumbs in a third bowl.

        Dip each potato bite into the flour, shaking off the excess, then into the beaten eggs, and finally coat well with the breadcrumbs. Set aside on a parchment-lined baking sheet.

          In a large skillet, heat about an inch of oil over medium-high heat. To test if the oil is ready, drop a small piece of bread into the oil; if it bubbles and sizzles, you are good to go.

            Carefully add a few potato bites to the hot oil, making sure not to overcrowd the pan. Fry until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
