1 sheet of puff pastry (thawed if frozen)

1 cup crumbled blue cheese

1 medium onion, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1/4 cup shredded mozzarella cheese

1 egg (beaten, for egg wash)

Salt and pepper to taste

Caramelize the Onions: In a skillet, heat olive oil and butter over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 15-20 minutes or until the onions are golden brown and caramelized. Add the minced garlic and thyme, cooking for an additional 2 minutes until fragrant. Remove from heat and let cool.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet into a rectangle (about 12x15 inches).

      Spread the Filling: Evenly distribute the caramelized onion mixture over the puff pastry, leaving a small border around the edges. Sprinkle the crumbled blue cheese and shredded mozzarella evenly over the onion layer.

        Roll It Up: Starting from one long side, carefully roll the pastry into a tight log. Make sure to keep the filling inside as you roll.

          Slice the Pinwheels: Once rolled, use a sharp knife to slice the log into 1-inch thick pinwheels. You should have about 12-15 rolls.
