1 large sheet of puff pastry (thawed if frozen)

1 cup blue cheese, crumbled

1 large onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

1 egg (for egg wash)

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 15-20 minutes until the onions are golden and caramelized. Add balsamic vinegar, thyme, and a dash of pepper. Stir to combine and cook for another 2-3 minutes until the vinegar has reduced. Remove from heat and let cool.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet into a rectangle about 1/8 inch thick.

      Spread the Cheese and Onions: Evenly spread the crumbled blue cheese over the entire surface of the pastry. Then, layer the cooled caramelized onions evenly over the cheese.

        Roll the Pastry: Starting from one edge of the rectangle, carefully roll the pastry tightly into a log. Make sure to keep the filling contained as you roll.

          Slice the Pinwheels: Once you have a tight roll, use a sharp knife to slice the log into 1-inch wide pinwheel rounds.

            Prepare for Baking: Preheat the oven to 400F (200C). Line a baking sheet with parchment paper. Place the pinwheel rolls on the prepared baking sheet, leaving space between each.

              Egg Wash: In a small bowl, beat the egg and brush the mixture over the tops of the pinwheel rolls for a golden finish.

                Bake: Bake in the preheated oven for 15-20 minutes or until the pinwheel rolls are golden brown and puffed.

                  Serve: Allow the rolls to cool slightly before serving. Enjoy them warm!
