1 large round sourdough bread loaf (about 1 pound)

8 oz Brie cheese, cut into smaller pieces

1 cup fresh cranberries

1/4 cup sugar

1/4 cup water

1 teaspoon orange zest

1 tablespoon fresh thyme leaves (plus extra for garnish)

2 tablespoons olive oil

Sea salt for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bread: Using a serrated knife, cut the sourdough loaf into a crisscross pattern. Make sure not to cut all the way through to the bottom to keep the bread intact.

      Make the Ruby Cranberries: In a small saucepan, combine fresh cranberries, sugar, water, and orange zest. Bring to a boil over medium heat and then reduce to a simmer. Let it cook for about 10 minutes until the cranberries burst and the mixture thickens slightly. Remove from heat and stir in the thyme leaves. Set aside to cool.

        Assemble the Bloom: Carefully pull apart the cuts in the sourdough to create sections. Drizzle olive oil over the top and sprinkle with sea salt.

          Stuff with Brie: Gently tuck pieces of Brie cheese between the cuts of the bread, allowing some to peek out.

            Add Cranberries: Spoon the ruby cranberry mixture generously over the cheese, filling in the cuts and letting it drip down onto the crust for extra flavor.
