For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

2 tablespoons melted butter

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.

      Prepare Cream Cheese Filling:

        In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Set aside.

          Mix Dry Ingredients:

            In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk until evenly mixed.

              Combine Wet Ingredients:

                In a separate bowl, mix together the melted butter, buttermilk, eggs, and vanilla extract until well combined.

                  Combine Dry and Wet Ingredients:

                    Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.

                      Fill Muffin Tin:

                        Spoon about 1 tablespoon of muffin batter into each muffin cup. Then, add a heaping teaspoon of the cream cheese filling on top of the muffin batter. Finally, add another tablespoon of muffin batter to cover the cream cheese filling.

                          Prepare Cinnamon Sugar Topping:

                            In a small bowl, mix together the granulated sugar and ground cinnamon. Drizzle the melted butter over the top and stir to combine.

                              Top Muffins:

                                Sprinkle the cinnamon sugar mixture generously over the top of each muffin.

                                  Bake:

                                    Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean (a little cream cheese is okay).

                                      Cool and Enjoy:

                                        Allow the muffins to cool in the pan for 5 minutes. Transfer to a wire rack to cool further. Serve warm and enjoy the gooey cream cheese surprise in the center!
