Ingredients

2 lbs Yukon Gold potatoes, peeled and cubed

½ cup unsalted butter, at room temperature

½ cup heavy cream, warmed

Salt, to taste

Freshly ground black pepper, to taste

2 cloves garlic, minced (optional)

Chives, finely chopped (for garnish)

Instructions

Prep the Potatoes: In a large pot, place the cubed Yukon Gold potatoes and cover with cold, salted water. Bring to a boil over medium-high heat.

Cook the Potatoes: Once boiling, reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

Melt the Butter: In a small saucepan, melt the unsalted butter over low heat. If using garlic, add it to the butter and cook for about 1-2 minutes until fragrant but not browned.

Mash the Potatoes: Using a potato masher or ricer, mash the potatoes until smooth and creamy. For an extra fluffy texture, don’t overwork the potatoes.

Incorporate Ingredients: Gradually mix in the warm heavy cream and melted butter (with garlic), ensuring everything is evenly combined. Continue to mash until you reach your desired consistency.

Season: Season generously with salt and freshly ground black pepper, adjusting to taste.

Garnish and Serve: Transfer the mashed potatoes to a serving bowl and sprinkle with chopped chives for an aromatic touch.
