Ingredients

2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1/2 cup fresh blueberries

1/4 cup cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1 tablespoon honey

1/4 teaspoon cinnamon

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Blueberry Mixture: In a small bowl, combine the fresh blueberries, honey, cinnamon, and a pinch of salt. Use a fork to gently mash the blueberries while still keeping some whole. Set aside.

Spread the Cream Cheese: Take one slice of sourdough bread and spread the softened cream cheese generously on one side.

Layer the Ingredients: On top of the cream cheese, layer half of the shredded cheddar cheese, followed by the mashed blueberry mixture. Sprinkle the remaining cheddar cheese on top of the blueberries.

Top with Bread: Place the second slice of sourdough bread on top, cream cheese side down, making a sandwich.

Butter the Bread: Spread the softened butter evenly on the outside of both slices of bread.

Grill the Sandwich: Heat a non-stick skillet over medium heat. Carefully place the sandwich in the skillet. Cook for 3-4 minutes on one side or until golden brown and crispy. Flip the sandwich and cook for another 3-4 minutes until the other side is crispy and the cheese has melted.

Serve: Remove the sandwich from the skillet and let it cool for a minute. Cut it in half and serve warm. If desired, garnish with fresh mint leaves for an extra touch.
