2 1/4 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon salt

3/4 cup unsalted butter (softened)

1 cup granulated sugar

1 large egg

1/4 cup molasses

1 tablespoon freshly grated ginger (optional for extra zing)

1/2 cup coarse sugar (for rolling cookies)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt. Set this mixture aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter with the granulated sugar until the mixture is light and fluffy, about 3-4 minutes.

        Add Egg and Molasses: Mix in the egg and molasses until fully incorporated. If using freshly grated ginger, add it to the mixture for an extra kick.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
