4 cups rhubarb, chopped into 1-inch pieces

1 cup granulated sugar

1/4 cup all-purpose flour

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 teaspoon ground cinnamon (optional)

Crisp Topping:

1 cup old-fashioned oats

3/4 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon salt

6 tablespoons cold unsalted butter, cut into small pieces

Instructions
 

Prepare the Filling:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, combine chopped rhubarb, granulated sugar, flour, vanilla extract, lemon juice, and cinnamon (if using). Toss gently until the rhubarb is evenly coated. Transfer the filling mixture into a greased 9x13-inch baking dish.

        Make the Crisp Topping:

          - In another bowl, mix the old-fashioned oats, all-purpose flour, brown sugar, granulated sugar, baking powder, and salt. Stir until well combined.

            - Add the cold butter pieces into the dry mixture. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs.

                - Evenly sprinkle the crisp topping over the rhubarb filling in the baking dish. Spread it out gently to cover the fruit completely.
