Ingredients

3 medium beets, peeled and grated

1 large carrot, peeled and grated

1/4 cup red onion, finely chopped

1/2 cup apple, grated (Granny Smith or Honeycrisp work well)

1/4 cup toasted walnuts, roughly chopped

1/4 cup crumbled feta cheese (optional)

2 tablespoons fresh dill, chopped

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Instructions

Prepare the Beets: Start by peeling and grating the beets. To minimize staining your hands, you might want to wear gloves during this process.

Mix the Vegetables: In a large mixing bowl, combine the grated beets, grated carrot, chopped red onion, and grated apple. Toss them together gently.

Add Nuts and Cheese: Fold in the toasted walnuts and crumbled feta cheese (if using), ensuring everything is well mixed.

Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until it's well combined.

Combine and Toss: Pour the dressing over the grated salad mixture and toss well to coat all ingredients evenly.

Garnish and Serve: Sprinkle the fresh dill over the top and give it one final gentle toss. Taste and adjust seasoning if necessary.

Chill: For the best flavors, chill the salad for at least 30 minutes before serving, allowing the ingredients to meld together.
