2 boneless, skinless chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup cooked quinoa or brown rice

1 cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 lemon, juiced

1/4 cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper. Add chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Heat a skillet over medium heat. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the pan and let it rest for a few minutes before slicing.

      Prepare the Vegetables: While the chicken is cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and halve the Kalamata olives.

        Assemble the Bowl: In a large bowl, start with a bed of cooked quinoa or brown rice. Layer sliced chicken on top, followed by diced cucumber, cherry tomatoes, red onion, olives, and crumbled feta cheese.

          Garnish and Serve: Drizzle the lemon juice over the bowl and sprinkle with fresh parsley. Serve with tzatziki sauce on the side or drizzled on top.
