Ingredients
  

  • 4 pieces bone-in chicken thighs skin-on is preferred for flavor
  • 1 pound Yukon Gold potatoes cut into wedges
  • 1 tablespoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 3 cloves garlic minced
  • 1 cup fresh lemon juice about 4 lemons
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt or to taste
  • 1 teaspoon black pepper or to taste
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). In a large bowl, combine the lemon juice, olive oil, minced garlic, oregano, smoked paprika, salt, and pepper to create the marinade.
  • Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes while you prepare the potatoes.
  • In a baking dish, arrange the potato wedges in a single layer, then drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  • Place the marinated chicken thighs on top of the potatoes in the baking dish. Pour any remaining marinade over the chicken and potatoes.
  • Bake in the preheated oven for 25 minutes or until the chicken is golden brown and cooked through, and the potatoes are tender.
  • Once done, remove the dish from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.

Notes

Tip 1: For extra flavor, you can add sliced red onion or bell peppers to the potato layer.
Tip 2: This dish can be made ahead and reheated; it also freezes well.
Variation: Substitute chicken thighs with drumsticks or breasts for a different texture.
