Ingredients
  

1.5 lbs boneless skinless chicken thighs, cubed

1/4 cup olive oil

3 tablespoons fresh lemon juice

Zest of 1 lemon

4 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon red pepper flakes (optional for heat)

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

Instructions
 

In a large mixing bowl, combine olive oil, fresh lemon juice, lemon zest, minced garlic, oregano, salt, black pepper, paprika, and red pepper flakes. Whisk until well blended.

    Add the cubed chicken thighs to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour (or up to 6 hours for more flavor).

      Preheat your grill to medium-high heat.

        While the grill is heating, thread the marinated chicken onto the skewers. Leave a little space between each piece to ensure even cooking.

          Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Once done, remove the skewers from the grill and let them rest for a few minutes.

              Serve warm with lemon wedges and a side of tzatziki sauce or over a bed of Greek salad for a complete meal.
