2 lbs baby Yukon gold potatoes, halved

1/4 cup olive oil

1/4 cup freshly squeezed lemon juice (about 2-3 lemons)

4 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/2 cup vegetable broth or chicken broth

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Whisk until well mixed.

      Add the halved potatoes to the bowl and toss them in the marinade until well coated.

        In a large roasting pan, spread out the potatoes in a single layer.

          Pour the broth into the pan around the potatoes (not over them). This will create steam and help the potatoes cook evenly.

            Roast the potatoes in the preheated oven for about 45-50 minutes, or until golden brown and tender. Toss the potatoes halfway through the cooking time to ensure even browning.

              Once done, remove from the oven, and let sit for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
