Ingredients

12 oz spaghetti

4 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup Kalamata olives, pitted and sliced

1 tsp dried oregano

1 tsp red pepper flakes (optional)

1 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped

Juice of 1 lemon

Salt and pepper to taste

Instructions

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Sauté Garlic and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

Mix in Ingredients: Add the sliced Kalamata olives, dried oregano, and red pepper flakes (if using). Stir to combine, cooking for another minute.

Combine with Spaghetti: Add the cooked spaghetti to the skillet. Pour in the reserved pasta water and toss everything well. Cook for an additional 2 minutes to heat through.

Finish the Dish: Remove from heat and fold in the crumbled feta cheese, chopped parsley, and lemon juice. Season with salt and pepper to taste.

Serve: Plate the Greek spaghetti and garnish with additional feta and parsley if desired. Enjoy hot!
