Ingredients
  

1 cup Greek yogurt (plain, unsweetened)

1 cup almond flour

1/2 cup rolled oats

1/2 cup protein powder (vanilla or unflavored)

1/4 cup honey or maple syrup

1/4 cup almond butter (or any nut butter)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips or chopped nuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), almond butter, and vanilla extract. Whisk until smooth and fully incorporated.

      Combine Dry Ingredients: In another bowl, mix together the almond flour, rolled oats, protein powder, baking soda, and salt until well combined.

        Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If desired, fold in the chocolate chips or nuts.

          Form Cookies: Using a tablespoon or a cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie as they will spread slightly.

            Bake: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The centers will look slightly underdone but will firm up as they cool.

              Cool: Remove the cookies from the oven and let them rest on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
