Ingredients

2 boneless, skinless chicken breasts

1 cup mixed salad greens (spinach, arugula, romaine)

1 cup strawberries, hulled and sliced

1 cup blueberries

1/2 cup crumbled feta cheese

1/4 cup candied pecans (or walnuts)

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette dressing

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, combine olive oil, salt, and pepper. Coat the chicken breasts with the mixture and let them marinate for at least 30 minutes to enhance the flavor.

Grill the Chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Prepare the Salad: In a large bowl, mix the salad greens, sliced strawberries, blueberries, crumbled feta, and candied pecans. Toss them gently to combine the flavors.

Make the Dressing: Drizzle the balsamic vinaigrette over the salad, tossing again to evenly coat the ingredients.

Assemble the Salad: Slice the grilled chicken breasts and place them on top of the prepared salad. Optionally, drizzle a little more balsamic vinaigrette over the chicken for added flavor.

Serve: Enjoy your Grilled Berry Feta Chicken Salad immediately, garnished with additional berries if desired.
