Ingredients
  

12 fresh figs

6 slices of thick-cut bacon

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon fresh rosemary, finely chopped (optional)

Freshly ground black pepper to taste

Sea salt to taste

Skewers (if using wooden skewers, soak in water for 30 minutes prior)

Instructions
 

Prepare the Figs: Rinse the figs under cold water and pat them dry. Cut a small cross into the top of each fig, about halfway down, to help them open nicely when grilled.

    Prepare the Bacon: Preheat your grill to medium-high heat. While the grill is heating, cut the bacon slices in half. Wrap each fig with a half slice of bacon, securing it with a toothpick if necessary.

      Make the Glaze: In a small bowl, mix together the maple syrup, balsamic vinegar, and finely chopped rosemary (if using). This will be used for basting.

        Grilling the Figs: Place the bacon-wrapped figs directly on the grill. Grill for about 4-5 minutes on each side, or until the bacon is crispy and the figs are softened. Use a brush to baste them with the maple syrup glaze every couple of minutes.

          Season and Serve: Once they are done grilling, remove them from the grill and sprinkle them with a touch of sea salt and freshly ground black pepper. Arrange them on a serving platter.

            Drizzle with Remaining Glaze: Drizzle any remaining maple syrup mixture over the figs for an extra touch of sweetness and flavor.
