Ingredients

16 oz (450g) cremini or button mushrooms, cleaned and stemmed

4 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes prior to assembly)

Instructions

Prepare the Marinade: In a mixing bowl, combine the olive oil, minced garlic, chopped parsley, dried oregano, red pepper flakes, salt, and black pepper. Mix well to create a marinade.

Marinate the Mushrooms: Add the cleaned mushrooms to the bowl and toss them gently in the marinade until fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to 1 hour.

Preheat the Grill: While the mushrooms are marinating, preheat your grill to medium-high heat.

Assemble the Skewers: Take the marinated mushrooms out of the refrigerator and thread them onto the skewers, leaving a little space between each mushroom to ensure even cooking.

Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the mushrooms are tender and have nice grill marks. Keep an eye on them to prevent burning.

Serve: Remove the skewers from the grill and let them rest for a couple of minutes. You can garnish with extra parsley if desired. Enjoy these delectable garlic mushroom skewers warm as an appetizer or side dish!
