Ingredients
  

  • 4 pieces chicken breasts boneless and skinless
  • 0.5 cups lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 0.25 cups olive oil extra virgin
  • 2 cups broccoli florets steamed
  • 1 cups quinoa cooked

Instructions
 

  • In a bowl, combine lemon juice, minced garlic, and olive oil to create the marinade.
  • Add the chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat the grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
  • While the chicken is grilling, steam the broccoli florets until tender.
  • Once the chicken is cooked, slice it and assemble the meal prep bowls with quinoa, broccoli, and grilled chicken.

Notes

These meal prep bowls can be stored in the refrigerator for up to 4 days. You can substitute chicken with tofu for a vegetarian option.
