Ingredients
  

1.5 lbs boneless, skinless chicken thighs (cut into 1-inch cubes)

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup olive oil

3 cloves garlic (minced)

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 large bell pepper (cut into 1-inch pieces)

1 red onion (cut into 1-inch pieces)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine lemon juice, olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper. Whisk until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer to a resealable bag. Refrigerate for at least 1 hour, or up to 4 hours for more flavor.

      Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. If using metal skewers, skip this step.

        Assemble the Skewers: Thread the marinated chicken pieces, bell pepper pieces, and onion pieces onto the skewers, alternating them for a colorful presentation.

          Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop over medium-high heat.

            Grill the Skewers: Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Serve and Enjoy: Remove the skewers from the grill and let them rest for a few minutes. Serve with a side of grilled vegetables or a fresh salad.
