Grilled Mango Chicken

Ingredients
  

4 boneless, skinless chicken breasts

1 large ripe mango, peeled and diced

1/4 cup fresh lime juice

1/4 cup olive oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons honey

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinade Preparation: In a medium bowl, combine the diced mango, lime juice, olive oil, minced garlic, grated ginger, honey, cumin, smoked paprika, salt, and pepper. Blend until you have a smooth marinade, leaving some mango chunks for texture if desired.

    Marinating the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the mango marinade over the chicken, making sure it's well coated. Reserve the other half of the marinade for basting. Seal the bag or cover the dish, and refrigerate for at least 1 hour (up to 4 hours for more flavor).

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C).

        Grilling the Chicken: Remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill and cook for about 6-7 minutes on one side, then flip.

          Basting: Baste the chicken with the reserved mango marinade as it cooks. Grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

            Resting the Chicken: Remove the chicken from the grill and let it rest for 5 minutes before slicing.

              Serving: Slice the Grilled Mango Chicken into strips, garnish with fresh chopped cilantro, and serve with a side of rice or a fresh green salad.
