Ingredients
  

4 boneless, skinless chicken breasts

1 ripe mango, peeled and diced

1 cup fresh pineapple, diced

1/4 cup honey

1/4 cup soy sauce

2 tablespoons olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon grated ginger

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prepare Marinade: In a medium bowl, combine diced mango, pineapple, honey, soy sauce, olive oil, lime juice, minced garlic, grated ginger, salt, and pepper. Mix well.

    Marinate Chicken: Place the chicken breasts in a zip-top bag or shallow dish, then pour half of the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 1 hour (up to 4 hours for more flavor).

      Preheat Grill: Preheat your grill to medium-high heat.

        Grill Chicken: Remove chicken from the marinade and discard the marinade used for marinating. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

          Prepare Sauce: While the chicken is grilling, bring the remaining marinade to a boil in a small saucepan and allow it to simmer for about 5 minutes to thicken slightly.

            Serve: Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken and drizzle the thickened sauce over the top. Garnish with fresh cilantro.
