1 kg octopus, cleaned and whole

4 tbsp olive oil

1 lemon, juiced (plus lemon wedges for serving)

6 cloves garlic, minced

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

2 tbsp fresh parsley, chopped

1 tbsp red wine vinegar

1 tsp crushed red pepper flakes (optional)

Instructions
 

Prepare the Octopus: Place the cleaned octopus in a large pot of salted water. Bring to a boil, then reduce to a simmer and cook for about 45-60 minutes, or until tender (check tenderness by piercing with a fork). Drain and allow to cool.

    Marinate: In a large bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, salt, black pepper, parsley, red wine vinegar, and crushed red pepper flakes (if using). Once the octopus is cool enough to handle, cut it into smaller pieces (tentacles and body). Add the octopus to the marinade, and let it sit for at least 30 minutes (or up to 2 hours in the refrigerator).

      Preheat Grill: Prepare your grill for medium-high heat. If you're using a charcoal grill, allow the coals to reach a nice gray color.

        Grill the Octopus: Remove the octopus from the marinade and let the excess marinade drip off. Grill the octopus pieces for about 3-4 minutes per side, until slightly charred and crispy.

          Serve: Arrange grilled octopus on a serving platter. Drizzle with any leftover marinade, and serve with lemon wedges for squeezing over the top. Garnish with extra chopped parsley if desired.
